*This easy, gluten-free recipe would also work great with salmon, chicken and/or turkey! Be creative 🙂
1/2 cup almond meal (aka almond flour or ground almond)
1/4 heaping cup of unsweetened shredded coconut
2 tbsp ground flax
1 tsp cinnamon
Pinch of nutmeg
-Mix all ingredients together in a large bowl
-Coat your tilapia on both sides with the mixture, if you gently pat down on the fish, the coating will stay on better.
-You can fry them in coconut oil or bake them in the oven with a drizzle of melted coconut oil on top of the fish. My oven is broken right now so I was forced to fry!
