For the sauce:
1 tbsp EVOO
1 tbsp balsamic vinegar
1 tsp liquid honey
1 tbsp chia seeds (optional but optimal)
1 tbsp nutritional yeast (optional)
1/2 tbsp fresh rosemary
1/2 tbsp fresh basil
1/4 tsp sea salt
1/4 tsp black pepper
For the scramble:
1 egg and 3/4 of an egg white carton
3/4 cup diced turkey bacon (12 slices)
1 cup chopped mushrooms
1 cup halved grape tomatoes
1/4 cup sliced red onion
3 large handfuls of organic baby spinach
-Cook your 12 strips of turkey bacon on a skillet on med-high heat and when cooked, dice your bacon strips.
-Meanwhile, stir all the sauce ingredients together and set aside
-Scramble your egg and whites together in a seperate skillet
-When your eggs are halfway done, add the mushrooms and onions to the egg pan. Fry for a few minutes.
-Next add your tomatoes, your now chopped turkey bacon pieces, and your spinach.
-Add your sauce and stir until the spinach has wilted.
