Made sugar-free cookies last night and the recipe was inspired by @sambaby91 on Instagram!
-1/2 can pumpkin purée
-1 cup oats
-1/8 cup flour (I used coconut)
-2 tbsp all natural peanut butter/nut butter (optional)
-10 pitted dates, chopped up
-1 tbsp dried currants
-2 tsp cinnamon
*feel free to add nuts, seeds, other dried fruits, etc.
-Mix all ingredients together and bake for ~10 mins at 375•F. Made me about ~20 cookies (depends on size you make them 😊)
