Spicy Pumpkin Soup



-1 can (14 oz) 100% pumpkin purée
-3 cups organic vegetable or chicken broth
-1 tbsp apple cider vinegar
-1 tbsp pure maple syrup
-2 tsp cayenne pepper (or whatever amount you can handle!)
-1/2 tsp chili powder
-1/2 tsp cinnamon
-1/4 tsp nutmeg
-1/8 tsp black pepper
•If you like thicker soups, add a snack pack size of unsweetened apple sauce (about 1/2 cup)
-1 cup unsweetened almond milk
•Garnish (optional):
-1/2 cup raw pumpkin seeds
-3 slices of bacon or turkey bacon
-4 heaping tbsp of plain Greek yogurt (1 tbsp per serving)


-In a large pot, mix together pumpkin purée, broth, apple cider vinegar, maple syrup, and spices. Bring to a boil and let simmer for 5-10 minutes, covered.
-Once heated all the way through, stir in milk until blended and cook until heated through (do not let boil)
-Ladle into bowls and top with garnish!
