Egg Muffins


First time making these protein packed muffins! I’ve been meaning to try them forever! So easy, so delicious!


-3 whole eggs
-2 cups egg whites
-Whatever you want to put in them!

I used (but did not measure, sorry)
-Red bell pepper, chopped
-Orange bell pepper, chopped
-Green onions, chopped
-Cooked ham, diced
-Baby spinach, chopped
-Cayenne pepper
-Sea salt and pepper to taste


-Preheat oven to 375•F
-Mix together eggs and egg whites with desired spices/herbs. Set aside.
-Stir all vegetables and meat (if using) together.
-Grease your muffin tins or line with muffin liners. Pour in 1 tbsp of egg mixture at the bottom of liner.
-Fill the cups with 1 tbsp veggie mix and then pour the rest of the egg mixture on top. Feel free to go right to the rim.
-Bake for ~20 minutes or until to tops of your muffins are hardened!
