1 Tbsp EVOO
1 pound ground turkey breast
1 can (14.5 ounces) diced tomatoes
1/2 cup organic chicken broth
1/8 cup chopped green onion
1.5 cups of sliced zucchini
1 cup of lentils, rinsed and drained
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp ground cumin
1/4 tsp cayenne pepper
1/4 tsp red chili flakes
1/8 tsp cinnamon
*Optional: Hot sauce and/or goat cheese as garnish.
-Heat EVOO in a large skillet over med heat. Add turkey, breaking up the pieces with a wooden spoon, and cook for ~3 mins then add zucchini.
-After another couple minutes add the tomatoes with liquid, broth, lentils, green onions, and spices.
-Stir and bring to a boil, then reduce heat and simmer for 20 minutes.
-I served with extra hot sauce and goat cheese sprinkled on top.
