Another modified recipe from The New Absdiet Cookbook! Enjoy!
-1 Tsp extra virgin olive oil
-2 cups roughly torn baby spinach
-1/2 diced red pepper
-1/8 cup chopped green onion
-1 can of beans of your choice, rinsed and drained (I used organic pinto)
-1.5 cups of pre-cooked chicken, cut or torn. (I used shredded, boiled chicken)
-1/2 cup organic chicken broth
-1/4 cup organic tomato sauce
-Salt and Pepper to taste
*I like loads of flavor so added cayenne, paprika, chili powder, and chili flakes
-In a non-stick pan over med-low heat, sauté the spinach and peppers in oil for ~2 mins, stirring frequently.
-Add the beans, chicken, and green onion and sauté for 1 more minute.
-Add the broth and tomato sauce, and desired spices.
-Simmer for 10 minutes.
