Fluffy Pomeberry Pancakes

This recipe is just an old recipe that I tweaked a bit to tackle some new goals. I always lean on bananas and they are very high in sugar. I’m obsessed with sugar and need to kick my cravings in the ass!!! In this recipe I used all applesauce but you could use a medium ripe banana and 1/4 cup applesauce instead of all applesauce if you want! Enjoy 🙂

Fluffy Pomeberry Pancakes

Ingredients:

1 egg
1 egg white
2 snack packs of organic, unsweetened apple sauce (200 ml)
1/2 cup Bob Mill’s All-Purpose Gluten-Free flour
1/4 cup almond milk
1 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp psyllium husk
1/2 tsp cinnamon
Pinch of sea salt
1/4 cup blueberries (mashed)
1/4 cup pomegranate seeds

Directions:

-Mix all ingredients but the blueberries and pomegranate in a food processor
-Stir in the fruit.
-Proceed to pan, fry in coconut oil
-Top however you desire!

  1. Ok….these look soo delicious!! Both of my little boys are allergic to nuts. Can the almond milk be substituted for Coconut milk or Oat milk? …and what about the eggs….they are allergic to that too. Can I substitute applesauce in plac of that? Thanks in advance! Beautiful recipes!!!!!
