I’ll always be a “fat kid” at heart, and in my mind…but thankfully I’ve found the secret to tricking my brain into thinking it’s eating my favorite fatty foods-and that’s clean cooking!
-1 cup of quinoa
-1/4 cup (6-7 slices) turkey bacon
-1 or 2 fried eggs/chopped
-1/4 cup chopped carrot
-1/4 cup green peas
-1/4 cup corn
-1/4 cup chopped green onion
-Sea salt and pepper to taste
-Make your quinoa according to package instructions
-Fry or broil your turkey bacon until cooked, when cooled, dice into small pieces.
-Prepare frozen carrot, corn, and peas according to package directions, and rinse and strain.
-Chop green onions and add to quinoa. Add turkey bacon and veggies. Add a pinch of salt and pepper and stir!
