An amazing recipe from “The New AbsDiet Cookbook” that is meant for kids, so naturally I interpreted that as it was meant for me lol!
-2 slices of bread (I’m gluten free so I used Udi’s cinnamon raisin)
-1 small, ripe banana
-1 tbsp of “Tofutti” plain cream cheese, softened (put in microwave for a couple secs to soften), or a low fat cream cheese
-1 tbsp all natural peanut butter
-1/2 tbsp honey
-Pinch of sea salt
-Cut off a quarter of the banana and mash it in a bowl. Mix in the peanut butter, cream cheese, honey, and salt. (If you using regular bread, I would add cinnamon to this mix as well). Stir until combined.
-Spread this mixture on one side, on both slices of bread. Set aside.
-Heat coconut oil in a skillet on low-med heat. Cut up the rest of your banana in chunks and fry them in the oil until browning begins. Place the banana chunks in the sandwich.
-Fry your sandwich for a couple mins on each side!
