Coconut Banana Cream Pie Crepes


Okay this looks like a lot, but it’s really not. All I did was combine 3 of my recipes here. The gluten-free “crepe”, the coconut whipped cream, and the cinnamon and coconut covered bananas fried in coconut oil. Each of these recipes are easy as pie ☺ I just went and explained them all individually to save you from searching! Enjoy 😊

Coconut Banana Cream Crepes

The Crepe:


-1/4 cup All Purpose Gluten Free Flour
-1/4 cup water
-1 tsp cinnamon


-Mix ingredients together and cook like a pancake in coconut oil (med-low heat)

Coconut Whipped Cream:


-1 can of FULL fat coconut milk that has been in the fridge overnight (I find that the longer left in the fridge, the thicker your cream will be. I’ll store my coconut milk in the fridge as soon as I buy it, I just leave it there until I use it)
-1 tsp pure honey (optional-can help to make it thicker or stick together more if you got a “bad can” and helps to sweeten). I did not use honey.


-Place a large glass bowl and the mixers of an electric mixer in the freezer for at least 30 mins before making. I usually keep mine overnight, just as the coconut milk needs to be left overnight in the fridge.
-To make, carefully remove coconut can from the fridge, be sure not to interupt the cream and water layers. Scoop out the coconut cream that is the top layer and place in the glass bowl.
-Mix with an electric mixer until thick and peaks form. Feel free to add the honey ( if you wish) as you are mixing.
-Cover with cling wrap and place back in the fridge once made.

Cinnamon-Coconut covered Bananas fried in coconut oil:


-1 ripe banana, cut in slices
-unsweetened shredded coconut


-Place enough cinnamon and coconut in a bowl and mix.
-Coat your banana slices with the cinnamon/coconut powder mixture.
-Heat up coconut oil in a skillet and add coated banana slices once the coconut oil has melted.
-Fry the banana slices for about 2-3 mins on each side (med-low heat) until Golding starts.

The Coconut Banana Cream Pie Filling:

-Combine your fried bananas and your coconut whipped cream together. Mash it all together or leave the bananas in chunks. To avoid the cream to melt like soup as soon as you mix the two together, let your bananas cool off before combining!
