Peanut Butter N’ Jelly Pancakes

Ingredients for the pancakes:

1 tbsp pb2 (powdered peanut butter)-add more if you loooove a strong pb flavor, these pancakes just have a subtle hint of pb flavor…I don’t like it over-powering!
1/2 banana
1/2 cup of oats
1/2 cup unsweetened almond milk
1 tsp baking powder
1 tbsp cinnamon
1/2 tsp vanilla extract
1 egg
2 egg whites

Directions:

-Mix all ingredients in a food processor
-Cook in coconut oil
*Make sure to stir the batter everytime before putting it on the pan!

Ingredients for the Jelly (@joneacie ‘s recipe on Instagram):

1/2 cup frozen fruit (I used raspberries)
2 tbsp water
1-2 tbsp of chia seeds (depends how thick you like your jelly, use 2 tbsp if you like it thick)
1 tbsp pure honey or stevia

Directions:

-heat the frozen fruit and water in a saucepan over med-low heat
-when the fruit is softened, mash it and add your chia seeds and honey or stevia. Mix well.
-place in the fridge for ~10 minutes to allow for thickening to occur!

  1. I have two questions. 1 is this for one serving? Yum! 2: if I already have oats prossed how much do you think I’ll need of the “flour”. Thank you for all your recipes!!

    Peanut butter and jelly waffles is one of my top cravings
    Along with Brie cheese and crackers haha
