Light N’ Fluffy Paleo Pancakes
1/2 cup almond flour
2 tbsp coconut flour
1 tbsp psyllium husk (or ground flax)
pinch of salt
1/2 tbsp cinnamon
1/4 tsp baking soda
1/2 cup apple sauce
3/4 cup egg whites
2 tbsp honey
1/2 tsp vanilla extract
coconut oil for cooking pancakes
-Mix all ingredients in a food processor.
-Heat pan over low-med heat with coconut oil and spread heaping tbsp of batter onto pan…the batter is thick so you may have to spread it into a pancake shape.
-Cook 3-4 mins on each side. ***Careful, they are very light and fragile, flip with TONS of love****
