Mashed Sweet Potato

Ingredients:

1 medium sized sweet potato
1 tsp earth balance coconut spread
3 tsp almond milk or another milk alternative

Directions:

-Wash, peel (if desired, I didn’t because I like the skin), and cut your sweet potato in cubes.
-Boil on high for ~15-20 minutes or until tender.
-Mix with an electric beater after straining the water. Add your spread and almond milk as you mix.
-Feel free to mix in whatever spices/herbs you desire!
