Pumpkin Pancakes

Ingredients:

-1/2 cup oats
-1/2 cup unsweetened almond milk (or any other milk substitute)
-1/4 cup pure, organic pumpkin
-1 egg
-2 egg whites
-1 tbsp maple syrup
-1 tbsp pumpkin spice (If you don’t have pumpkin spice, add ground cloves, nutmeg, ginger, allspice and cinnamon all together, or what you have from those!)
-1 tsp cinnamon ( I know cinnamon is already in pumpkin spice, I have an obsession hehe-this added tsp is optional)
-1 tsp psyllium husk (or ground flax)
-1 tsp vanilla extract
-1 tsp baking powder
-Coconut oil, for frying

Directions:

-Mix all ingredients together using a food processor until you reach a batter
-Proceed to pan and fry in coconut oil.
-*This makes ~10-12 mini pancakes (I scooped on the pan using a heaping tbsp at a time)
