Cauliflower Rice

A great grain-free alternative for rice and a fabulous way to up your veggie intake!

Ingredients:

1/2 head of cauliflower (or whatever amount you want)
-1 tsp coconut oil
Optional:
-1 garlic clove, minced
-White onion, chopped
-Any spices or herbs

Directions:

-Rinse your florets under cold water and pat dry
-Pulse in a food processor until it resembles a “rice-like” texture
-Sauté your onion and garlic in coconut oil in a skillet on med-low heat for about 2 minuntes
-Add your cauliflower rice, and any spices or herbs and sauté for another 4-5 minutes!
