Coconut Pomegranate-Burst Pancakes

It’s pomegranate season! Happy dance! I love love love pomegranates and wanted to make something fun where there would be bursts of pomegranate fun in almost every bite! These pancakes, definitely did the trick! Dairy-free and gluten-free, enjoy my pretties!

Coconut Pomegranate-Burst Pancakes

Pancake Ingredients:

2 tbsp coconut flour
2 tbsp ground almond
1 egg
1 egg white
3 tbsp canned coconut milk
1.5 tbsp organic liquid honey
1/2 tsp baking powder
1 tsp vanilla extract
1 tsp psyllium husk
1/4 cup pomegranate

Directions:

-Mix all ingredients but the pomegranate in a food processor until mixed thoroughly
-Fold in your pomegranate carefully
-Proceed to pan and fry in coconut oil

Coconut Cream Cheese Frosting Ingredients:

2 tbsp plain flavored “Toffuti” cream cheese
2 tbsp coconut milk
2 tbsp unsweetened shredded coconut
1/2 tsp cinnamon
1/2 tsp vanilla extract
1.5 tbsp blue agave-maple syrup flavor

Directions:

-Heat up the tofutti in a microwave for a few seconds or stir it until it loosens up and becomes a warm creamy texture
-Add all other ingredients!
-Garnish with whatever you wish!
