Coconut Peanut Butter Cups


Another recipe inspired by @lisakthrives on Instagram! Clean Peanut Butter Cups! I knew I had to make these ASAP as soon as I laid my eyes on them 🙂 How sexy do these look!?!?!?!? Ok enough talk, on to the recipe.


Bottom Layer (chocolate):

2 tbsp melted coconut oil
4 tbsp smooth organic peanut butter
1/4 cup unprocessed cocoa powder
1 tsp pure vanilla extract
2 stevia packets
*Note* I did find the bottom layer a bit bitter, I’d suggest adding 1 tsp of organic honey or agave…or more stevia to taste.


-Stir all ingredients together until smooth.
-Set 7 large muffin pan liners into muffin pan
-Pour 1 tbsp into each liner (make sure to not dribble down the sides or you’ll have streaks in the final product!)
-Place in freezer on a flat surface while you make the top layer

*Note: I would have rather made mini cups, but I only had large liners, I’m not sure how many minis this recipe would make.

Top Layer (peanut butter and coconut):


2 tbsp melted coconut oil
4 tbsp smooth organic peanut butter
1/2 tsp pure vanilla extract
1 stevia packet (or more-to taste)


-Take pan out of freezer and place an even 1 tbsp on top of your solid chocolate layer.
-Sprinkle unsweetened shredded coconut on top
-Place back in freezer for another 15 mins.
-Keep stored in freezer or in an air-tight container in the fridge. They melt fast hahaha 😉

*Note-you can do anything with these. Keep them plain and simple or add nuts, dried berries, seeds, etc. Be creative!
