Gingerbread Protein Pancakes


If you want your home to smell like the inside of a cookie jar full of gingerbread cookies…..these are your protein pancakes! Wanted to try something different and Ive been thinking about holiday related recipes all week!!!! Better to experiment now and be fully prepared for the holidays right!? 😉


2/3 cup non-dairy milk – I used unsweetened almond milk
1/4 cup egg whites
1 tablespoon blackstrap molasses
1 tablespoon chia seed
1 teaspoon gluten-free pure vanilla extract
1 tablespoon of organic honey (you can also use maple syrup, agave nectar, 5 drops of stevia, 1 stevia packet)
2/3 cup almond flour
1 scoop vanilla protein powder
1 teaspoon baking powder
1 tablespoon ground cinnamon
1 teaspoon ground ginger
1/8 teaspoon ground cloves


-Mix your non-dairy milk and chia seeds together and place in fridge for 10 minutes to allow the seeds to become gelatinous
-Meanwhile, mix your dry ingredients together in a bowl
-Slowly add your wet ingredients, and stir until just mixed.
-Proceed to pan
-Top your pancakes however you wish, protein frosting, agave syrup, nuts, fruit, Greek yogurt…..(I made a vanilla frosting: combine vanilla protein powder and enough non-dairy milk to get the consistency you want, and crushed pecans)
