1 sweet potato, peeled and chopped
Large handful of organic spinach
1 zucchini, sliced
3 large mushrooms, chopped
1 red bell pepper, diced
1/2 white onion, diced
“Basoli” Pesto Sauce (next recipe)

-Preheat oven to 375•F
-In a deep baking dish, place down a large layer of tinfoil (enough to cover your casserole on top as well once it’s in)
-Layer your (from bottom up) sweet potato, spinach, zucchini, mushrooms, red pepper and onion, spread your Basoli pesto sauce all across as a final layer and sprinkle some goat cheese on top.
-Fold your casserole in the foil and bake for ~45 mins!
