“Basoli” Pesto Sauce


I made up this “Basoli” pesto sauce to go into a sweet potato casserole (which is what is being shown in the picture, the pesto and goat cheese layer) I’ll post the casserole up next! “Basoli” stands for basil and broccoli. For those of you who don’t really like broccoli, or have children who don’t-this pesto sauce is for you because you don’t even taste the broccoli! It’s a hidden, fibrous, nutritious gem in this recipe!

1 cup broccoli
1 cup fresh basil
1 tsp chili powder
1 tsp Mrs. Dash
1 tbsp minced garlic
2 tbsp pine nuts
1/2 cup EVOO
Pinch of cayenne pepper

-Process all ingredients except the EVOO in a food processor. Once it’s all mixed smooth and thoroughly, slowly pour in your EVOO with the machine still running. Finished when oil is all mixed in.
-Use for pastas, spread on wraps and sandwiches or burgers, casseroles, the possiblities are endless!!
