My man gobbled this all right up!!! He absolutely loved it! So if you have a spouse or children who are hesitant in trying new, healthier ideas….make this!!! It’s a success story! I have NO leftovers lol!!!
1 tsp EVOO
1/4 cup diced onion
1 diced garlic clove
3/4 cup quinoa
1/2 cup almond milk
1.5 cups of water
3/4 cup shredded cheese
Pinch of sea salt
Pinch of black pepper
-Preheat oven to 350•F
-Rinse and drain quinoa
-Sauté onion and garlic in EVOO on med-low heat in a pot.
-Add quinoa. Brown for 5 mins.
-Add water and bring to a boil. Cover and simmer for 10-15 mins or until all water is absorbed. Set aside for 5 mins to cool.
-Beat egg and milk together. Add cheese, salt and pepper.
-Gradually stir your cheese mix in with your quinoa and mix well
-Pour into a deep baking dish and bake uncovered for 35 mins.
