My mother used to work at a Head Office for a restaurant. She used to bring me home Hawaiian Chicken all the time. It was so delicious, but so terrible! It was garlic bread topped with chicken breast, cheese, pineapple, and hollandaise sauce. I dream about it every so often lol, and so I decided to come up with my own edible version haha! There will be 2 recipes below. One for the actual meal, and one for the Garlic, Basil, Mayo sauce I used as a topping.
Hawaiian Chicken: (not putting measurements because it depends on how many you make)
Garlic, Basil, Mayo sauce
-Grill your pineapple slices on low in coconut oil.
-in another pan, fry ground chicken and minced garlic on medium-low. When almost cooked, add green onions, basil, black pepper, and sea salt. Push mixture to one side of the pan.
-Throw your spinach on the other side of the pan just for a few seconds to warm it up.
-Top your pineapple with your spinach and ground chicken mixture.
-Top with Garlic, Basil, Mayo sauce 😊
Garlic, Basil, Mayo sauce/dip
1 egg yolk
1 and 1/2 tsp lemon juice
1 tsp white wine vinegar (reg vinegar will do just fine)
1/4 tsp Dijon mustard
1 garlic clove
1 large, fresh, basil leaf
1 tsp chia seeds (optional)
1/4 cup EVOO
Sea salt and black pepper to taste
-Mix all ingredients but the last 3 (EVOO, salt and pepper), in a food processor.
-Once everything is smooth, slowly pour in the EVOO with the machine still running.
-After the oil is mixed in thoroughly, add your salt and pepper to taste!
